  • 16 oz 450g cream cheese, softened (or dairy-free alternative)
  • 1 cup confectioners' sugar or maple syrup/agave for refined sugar-free
  • 1 tsp vanilla extract try almond or lemon for variation
  • 1 cup graham cracker crumbs or gluten-free alternative
  • 1/2 cup unsalted butter melted
  • 1/2 cup chocolate chips melted (for drizzling)
  • 1/2 cup chopped nuts crushed cookies, or sprinkles (for coating, optional)

Instructions
 

Step 1: Make the Base

  • In a large bowl, beat softened cream cheese, vanilla extract, and confectioners' sugar until the mixture is smooth and creamy.

Step 2: Chill the Mixture

  • Refrigerate the mixture for 1 hour to firm it up and make it easier to handle.

Step 3: Shape the Bites

  • Scoop and shape the chilled mixture into small balls (about 1–1.5 inches). Place them on a lined tray and refrigerate again for 1 hour.

Step 4: Coat the Bites

  • Mix graham cracker crumbs and melted butter in a shallow dish. Roll each cheesecake bite in the crumb mixture until fully coated.

Step 5: Add the Toppings

  • Drizzle the coated bites with melted chocolate and sprinkle with chopped nuts or other toppings if desired.
