- 4 chicken thighs breasts work as well
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic minced
- 1 teaspoon grated ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped green onions
Optional for serving:
- BBQ sauce for brushing
- Grilled pineapple rings
- Steamed white rice
- Macaroni salad
Marinate the Chicken
In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper.
Add the chicken thighs and coat them thoroughly.
Cover and refrigerate for at least 1 hour (2–4 hours for best flavor).
Cook the Chicken
Grill: Preheat grill to medium heat. Cook chicken for 6–8 minutes per side, basting with leftover marinade, until fully cooked and slightly charred.
Bake: Preheat oven to 400°F (200°C). Place marinated chicken in a baking dish and bake for 25–30 minutes.
Slow Cooker: Place chicken and marinade in the slow cooker. Cook on low for 4–5 hours or until tender.
Finish and Serve
Brush with BBQ sauce in the final minutes of cooking, if desired, for a sticky, flavorful glaze.
Garnish with chopped green onions.
Serve with steamed rice, grilled pineapple rings, or macaroni salad.
