Ingredients
  

  • 4 chicken thighs breasts work as well
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped green onions

Optional for serving:

  • BBQ sauce for brushing
  • Grilled pineapple rings
  • Steamed white rice
  • Macaroni salad

Instructions
 

Marinate the Chicken

  • In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper.
  • Add the chicken thighs and coat them thoroughly.
  • Cover and refrigerate for at least 1 hour (2–4 hours for best flavor).

Cook the Chicken

  • Grill: Preheat grill to medium heat. Cook chicken for 6–8 minutes per side, basting with leftover marinade, until fully cooked and slightly charred.
  • Bake: Preheat oven to 400°F (200°C). Place marinated chicken in a baking dish and bake for 25–30 minutes.
  • Slow Cooker: Place chicken and marinade in the slow cooker. Cook on low for 4–5 hours or until tender.

Finish and Serve

  • Brush with BBQ sauce in the final minutes of cooking, if desired, for a sticky, flavorful glaze.
  • Garnish with chopped green onions.
  • Serve with steamed rice, grilled pineapple rings, or macaroni salad.
