  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste

  • Preheat the Oven: Set your oven to 375°F (190°C) and allow it to preheat while you prepare the turkey breast.
  • Prepare the Turkey Breast: Pat the boneless turkey breast dry with paper towels to ensure crispy skin. Place it on a clean cutting board.
  • Season the Turkey: In a small bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper. Mix well to form a paste. Rub this mixture evenly over the entire surface of the turkey breast, ensuring all sides are coated.
  • Place in Roasting Pan: Transfer the seasoned turkey breast to a roasting pan or baking dish, skin-side up. If desired, tuck fresh herb sprigs around the turkey for added aroma.
  • Roast the Turkey: Place the roasting pan in the preheated oven. Roast for approximately 20 minutes per pound, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the breast. For a 2-pound breast, this will be about 40-45 minutes; for a 3-pound breast, about 60 minutes.
  • Rest and Serve: Once the turkey reaches the desired internal temperature, remove it from the oven. Tent it loosely with aluminum foil and let it rest for 10-15 minutes to allow the juices to redistribute. Slice the turkey breast against the grain into desired thickness and serve warm.

  • Brining Option: For an even juicier turkey breast, consider brining it prior to seasoning. A simple brine can be made with water, salt, sugar, and spices like bay leaves and peppercorns. Soak the turkey in the brine for several hours or overnight in the refrigerator.
